Garlic Parmesan Roasted Potatoes with Bacon

 

My family loves roasted potatoes and they are one of the more common sides for dinner at our house.  The original recipe is from Barefoot Contessa.  This recipe follows the same basic concept but adds the awesomeness of Bacon and Parmesan cheese!

Ingredients
3 pounds small red or white potatoes
2 tablespoons olive oil
2 tablespoons bacon grease (can substitute olive oil if desired)
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic
2 tablespoons minced fresh parsley
¼ cup freshly grated parmesan cheese
½ lb. bacon

Directions

Preheat the oven to 400°F.  Cook bacon until crisp (I used the oven method).  Reserve bacon drippings for later use and chop bacon into small pieces.




Put the potatoes in half or quarters and place in a bowl with the olive oil, bacon grease, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer.


Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.  Remove the potatoes from the oven, toss with parsley, parmesan cheese, and bacon, season to taste with any additional salt and pepper, and serve hot.
